Zucchini is one of those vegetables that is now being used as a low-carb substitute for just about everything and we are loving it. Zucchini is rich in several vitamins, minerals, and other beneficial plant compounds making it an amazing addition to any recipe. We also love the fact that you can never really tell when it’s in something (think: zucchini bread) but you still reap the benefits. Major win. Today on Want the Recipe, we decided to get a little creative and share some ways that you can start adding zucchini into your recipes and life.
