6. Epic Vegetarian Tacos from Cookie and Kate

If you’re a loyal follower, I apologize for the lack of creativity here. But if you’re new, you’re welcome. These are my absolute favorite tacos. The pickled onions are to die for — we never fail to make them for taco night. If I want my tacos a little “meatier”, I’ll roast cauliflower and squash or some white fish (like tilapia or sole) to add to my taco buffet.

8. Black Bean Burgers from Tasty

Try your hand (get it, from the picture) at a veggie burger for the books. I love this recipe because it uses oats instead of bread and uses a ton of spices to deliver flavor. Totally go for a bun if that’s what your body needs, but consider a lettuce wrap GF english muffin to keep the burger front and center of this meal.
