Interview with Jenna from Busy Girl Baking

Tell us about yourself! What’s your name, where do you live, where do you work?

I’m Jenna Brock, I live in San Diego, CA and am a career girl by day and baking blogger by night. I created Busy Girl Baking for all the baking lovers out there who need simple and time-effective recipes that look and taste amazing. My motto is with the right recipe, you can be a baking boss – no matter how busy you are.

Share your approach to food with us: what do you like to cook? Why?

I have always loved baking! From handcrafting mud cookies that baked in the warm afternoon sun as a kid, to concocting sweet treats to cure the Monday blues at the office, baking has always been a creative outlet and expression of love. It makes my heart so happy when I can make someone smile or brighten someone’s day with a homemade treat.

What are your favorite recipes? Why? Tell us about them!

Champagne Citrus Pound Cake

I personally love celebrating anything and everything with champagne, so it was only fitting to turn this bubbly treat into a delicious cake. The citrus creates a bright burst of tangy flavor, and the champagne bubbles create a light and airy cake texture that is beyond dreamy!

Triple Berry Skillet Cobbler

Summertime is my favorite season of the year, hands-down, partly because of the abundance of fresh, juicy berries everywhere. This no-fuss, wholesome cobbler is a major crowd pleaser and my go-to for everything from BBQs to relaxed family dinners

Honey Coconut Granola

I can’t get enough of this super simple, crazy good granola (seriously, I make it weekly). Every scrumptious cluster is packed full of antioxidant-rich, high-protein, and heart-healthy ingredients, so you can take on the week like a boss.

Cinnamon Maple Pecan Granola

This recipe is one of the most functional on my blog, with so much all-natural, wholesome goodness packed into each delicious cluster. From the heart-healthy oats and olive oil, to the antioxidant rich pumpkin seeds and chia seeds, anti-inflammatory cinnamon, and protein-rich nuts, this is a super simple, crazy delicious recipe you can feel really good about.

 Salted Caramel Cupcakes

Salted caramel is practically liquid gold. It’s sweet, buttery, and tastes amazing on anything it touches – especially chocolate. There’s something so sinfully decadent about this epic flavor pairing that I dare you to eat just one cupcake.

What’s your favorite thing about Want the Recipe?

I love that it allows me to digitally consolidate all my favorite recipes in one spot. It’s not only convenient, but a huge time-saver.

What food can you not live without?

Donuts! We used to get donuts with my dad every Saturday as a kid, and even as an adult I swear nothing tastes better; they’re nostalgic, classic, and heavenly good. Pizza is a close second!

What kitchen appliance do you swear by?

I love, love, love my KitchenAid Mixer!

What are your favorite blogs/ Instagram accounts that you follow? What do you like about them?

Oh my gosh, where do I even start? There are so many incredible baking bloggers that inspire me, from @brownedbutterblondie, @katiebirdbakes, @thesweetandsimplekitchen, to @yogaofcooking, @butternutbakery, @onesarcasticbaker, and many, many more. These ladies are not only incredibly talented bakers, recipe creators, and food photographers (talk about a triple threat), but they’re also thoughtful, approachable, awesome people.

Do you have any advice for our food community?

My advice is simple: just go for it. Whether it’s tackling a new recipe, hobby, job, etc., it’s better an “oops” than a “what if”, right?

For me, the decision to create a blog was full of so many “what if’s” that I almost gave up before I even started. There are still countless humbling moments where I don’t know what I’m doing, but I’m growing and frankly, that’s what it’s all about.

Do you have a favorite kitchen hack/ trick?

When it comes to cooking spray, I swear by Bak-Liene ZT non-stick baking spray! It combines both oil and flour, so your baked treats will pop right out of the pan with no oily residue.
