I believe that what we eat is a reflection of how we feel and vice versa, therefore I use only the purest and cleanest ingredients in everything I make. Everything is gluten free, dairy fairy, refined sugar free – basically paleo.

Tell us about yourself!

Cynthia Rimmer; Los Angeles; work in public relations & marketing – one of my projects is managing events for Chic Sketch, a fashion illustrating app company that provides fashion sketches to people either by sending their photos through the app or through attending an event where Chic Sketch is present (most of these events are beauty and fashion companies, but this can be used for any type of party/event)

Share your approach to food with us: what do you like to cook? Why?

I love to cook because I love making people happy! Bringing a smile to those I love through something I made with my hands bring true joy to me. I believe that what we eat is a reflection of how we feel and vice versa; therefore, I use only the purest and cleanest ingredients in everything I make. Everything is gluten free, dairy free, refined sugar free – basically paleo. Coming from a Russian/Jewish background, my two cultures have heavily inspired me in the things I cook.

My Russian side comes out in lots of the healthy desserts I make. I think Russians make the best pastries, so I take inspiration from the Napoleans (cream-layered torte) and Medniks (honey torte) cuisine and make super healthy clean pastries which are usually nut-based (almond flour and coconut flour are staples for me).

And my Jewish side comes out in that I make lots of Mediterranean/Israeli-inspired dishes. A few of the dishes I’ve made are challah, baklava, tahini brownies, halva cookies and lots of cookie and brownie recipes with dates! Dates are an Israeli staple as they are native to that part of the world.

What food can you not live without?

I cannot live without nuts! They are filled with so many nutrients and I use nuts in almost all of my desserts. My favorite thing to make is cookies with almond flour or pecan butter out of raw pecans.

What kitchen appliance do you swear by?

My Nutribullet! So convenient to make smoothies for one person.

Do you have any advice for our food community?

My advice is to eat foods made out of real ingredients as much as you can. We have one body to take care of for the rest of our lives and chemicals added to processed foods affect us in major ways – whether the results are immediate or become evident years down the line. HEALTH IS WEALTH.
