13 Not Sad Dinners for One

For those nights when it’s just you — no boys, girls, friends, drama. Just you and an empty stomach.

I love it when I’m alone so let’s not turn this into a sob story. It’s easy to make scrambled eggs or a bowl of pasta but let’s jazz up those solo nights a bit, shall we? And not to brag, but I even inspired myself with some of these ideas and I hope you feel the same.

1. Mason Jar Zucchini Noodle Salad

2. Lemony Cheesy Spaghetti Squash

Obsessed with this super simple, 6 ingredient recipe. One of which is salt and I’d def add pepper too sooo maybe it’s more like 7.  It says this recipe is for 1-2 but just get a smaller spaghetti squash if you’re solo (I EASILY CRUSH A WHOLE ONE) or a big boy if you want to eat leftovers tomorrow. Chanterelles are mushrooms. If you can’t find this variety, that’s okay get something else like Baby Bellas or Cremini. You’re doing great GF.
