I love to cook a variety of things. I like to use seasonal ingredients and make favorite comfort foods healthier. Most of the meals I make are done in 30 minutes or less as time is hard to come by with little kids!
Tell us about yourself!
My name is Elizabeth Bedia. I live in Michigan in the same town I grew up in. I have a doctorate degree in physical therapy. I have spent most of my career working with patients that have suffered major life changing injuries such as traumatic brain injuries, strokes and spinal cord injuries. Currently, my most important job is being a wife to my high school sweetheart and raising my 2 young boys.
Share your approach to food with us: what do you like to cook? Why?
I love to cook a variety of things. I like to use seasonal ingredients and make favorite comfort foods healthier. Most of the meals I make are done in 30 minutes or less as time is hard to come by with little kids! My favorite meal of the day is breakfast! I love to make big breakfasts for my family. We like a variety of egg dishes, baked oatmeal, omelets, pancakes, etc. I also love to bake. I have had a severe dairy allergy for my entire life. I have learned to bake well without dairy ingredients. My favorite cakes to make are dark chocolate cake and carrot cake. I love to try new recipes and swap out ingredients to make things dairy free.

Simple, fresh, flavorful and eclectic.
What are your favorite recipes? Why? Tell us about them!
I have made over this classic recipe to be paleo and dairy free. It’s always a crowd pleaser and bursting with lemon flavor. It’s simple to make yet tastes very impressive. I also love the chicken leftover on salads for lunches.
Protein Packed Quinoa Salad
This recipe is vegan and can easy be made ahead for meal prep. It has the crunch of nuts, sweet flavors from mango and so much plant based protein from the edamame and quinoa. Find the recipe here.
Cacao Peanut Butter Granola
I don’t do much meal prep but I always make a big batch of granola for the week. We love it as snacks and on top of dairy free yogurt or oatmeal for breakfast! This one has the perfect combo of chocolate and peanut butter. Find the recipe here.

What food can you not live without?
I am Italian American and I would have to say pasta!
What kitchen appliance do you swear by?
A good food processor!! I can make smoothies, pasta sauces, soups, nut butters, etc. in my mine! [I have this Cuisinart Food Processor that’s on’y $40 and it’s awesome. For pestos, butters, etc. I find it to be far better than the Vitamix.]
What are your favorite blogs/ Instagram accounts that you follow? What do you like about them?
@Crowded_kitchen – this is a mother daughter duo that are local to me. Their photos are gorgeous but most importantly their recipes are healthy, flavorful and approachable.
@Twopeasandpod – I have made so many of her recipes and they always turn out so well!
@Ohsheglows – She is vegan and her meals are packed with flavor and very healthy. Her cookbooks are fantastic and some of my most used!
Do you have any advice for our food community?
It is very easy to get overwhelmed with cooking and recipes. My advice would be to keep it simple and use ingredients you have on hand. Sometimes the best meals are the ones you just create from what you have available. I also would suggest to shop local when you can. I get very inspired to cook when I shop at our farmers market and can buy the freshest in season ingredients.
