Interview with Elise from Bak to the Root

Tell us about yourself!

Hi, my name is Elise. I recently moved to Paris, France, my country of birth, to get back to my roots before I dive into my next round of studies to become a Registered Dietitian and Certified Doula. My ultimate goal is to work with women from pre-pregnancy through postpartum — building strong, healthy foundations for generations to come.

Share your approach to food with us: what do you like to cook? Why?

I love seasonal cooking as it forces me to get creative with what I find at the local farmers’ market.  Nutritionally, the produce is overflowing with vitamins — and bursting with flavor! From juicy, summer tomatoes you can bite into like an apple, to the comforting and nourishing, winter stews/curries.  And, let’s be honest, who can’t resist the sights and smells of the local farmers’ market.

What are your 3-5 favorite recipes? Why? Tell us about them!

Oat Flour Banana Bread– I have always loved banana bread.  As a child, I often marveled at how those dark, spotted bananas on the counter could be transformed into something soooo delicious. After I started eliminating gluten from my diet, my beloved banana bread fell by the wayside.  Recently, refusing to throw away some overripe bananas, I decided to modify my childhood recipe, substituting white flour with ground up oats.  The result was mouth-watering.  I love to cut this loaf into slices and freeze them individually for a quick snack on the go.  Recipe here. 

Cashew Butter Brownies – Warning: these brownies are dangerously delicious and oh so gooey!  A number of years ago, when I desperately wanted a brownie but didn’t want the gluten or sugar, I stumbled upon this recipe. What I love most about it is that the ingredients can be scaled back to a single-portion — eliminating the temptation but none of the taste! Recipe Here.

Matcha Latte– There’s something so soothing and delicious about this daily cup of goodness.

While I could go on forever about the health benefits in a single cup, what fills me with wonder is how my daily “matcha moment” centers me, brings me great joy, and fills me with hope for the future.  I literally will not make my matcha until I know I have time to sit and enjoy it in deep reflection and gratitude.

As a side note, I strongly believe the abundance of antioxidants in this miracle drink played a significant role in my health journey: from healing my gut to boosting my energy.  And who doesn’t love the “calm focus” that is gifted with each cup.  Recipe here.

I love the concept of having all my favorite recipes in one spot giving me quick access to the recipes I love.

What food can you not live without?

Chocolate in every way, shape and form puts a smile on my face and a song in my heart. When I was a little girl, every weekend we would visit my great grandma in the French countryside. At the end of each meal, which typically consisted of food grown in her garden, we always ended with a square of chocolate and a verbena herbal tea.  These memories and this tradition crossed the Atlantic and continue to this day.

What kitchen appliance do you swear by?

My Vitamix– providing me with the frothiest of matcha lattes to warming soups and delicious juices; my Vitamix does it all!  The joke in my family is that our Vitamix is the most expensive latte frother known to man!

What are your favorite blogs/ Instagram accounts that you follow? What do you like about them?

@naptimekitchen– I look forward to Kate’s stories every day, she’s so funny and her kids are too darn cute! A great resource for healthy and kid-friendly meals on a budget.

@shutthekaleup– No perfect façade here, this woman is the queen of keeping things real — and her food is delicious.

@rachlmansfield– Got a sweet tooth? RM has definitely got that sweet tooth covered – guilt-free!

Do you have any advice for our food community?

Listen to your body!  We spend our lives searching for answers when, in fact, our bodies are constantly speaking to us.  If we practice listening, health and vitality will follow.  I’ve used this simple technique to heal all of my digestive issues.
