Tell us about yourself! What’s your name, where do you live, where do you work?
I’m Neda Varbanova, the creator of Healthy with Nedi and a nutritionist/ recipe developer based out of NYC. I love spending time with friends and family. Being in the kitchen is my absolute favorite thing to do. I enjoy cooking and feeding my loved ones. 🙂
Share your approach to food with us: what do you like to cook? Why?
I love creating healthier recipes based on peoples not so healthy favorite meals to show them that healthy food doesn’t need to be boring or lack flavor!
ravioli – zucchini ravioli
spaghetti – zoodles or palmini pasta
pizza – cauliflower crust pizza
burger – remove the bun
cake – flourless cake
the list can go on and on…

What are your 3-5 favorite recipes? Why? Tell us about them!
Cauliflower Crust Pizza – One regular slice of cheese pizza can be around 500 calories and 35 grams of carbs. One large slice of cauliflower crust pizza is 120 calories and only 6g carbs! As you see, this is a huge difference.
Eggplant Moussaka – Flavorful Middle Eastern Dish. This moussaka is low in carbs and high in protein, making it the perfect meal for someone who is watching their figure.
Paleo Bagels – My paleo bagels became a huge hit, not only because they are delicious but because they nutritious. One bagel is only 3g net carbs so people can finally enjoy a bagel without having to worry about consuming too many carbs.
Chinese Chicken with Veggies – A healthy spin on typical greasy Chinese take out. This meal is served over cauliflower rice which makes it much lighter.
Chocolate Zucchini Brownies – the hidden ingredient here is zucchini, making these brownies lighter and moist. One serving provides you with 9 grams of fiber and just 4 grams net carbs! Pretty magical!
What’s your favorite thing about Want the Recipe?
It is a very cool concept and I love being able to store recipes in one place. Makes it easier and a lot more organized!
What food can you not live without?
Bulgarian feta cheese and my grandma’s spanakopita (recipe will be available on my website soon!!)
What kitchen appliance do you swear by?
My Breville food processor and sharp set of chef knives.

Do you have any advice for our food community?
Don’t be afraid to experiment in the kitchen. If something doesn’t turn out the way you were expecting, try it again a different way and have fun with cooking!
Do you have a favorite kitchen hack/ trick?
If you want to make banana bread but your bananas aren’t ripe, quickly ripen them in the oven. Place them on a baking try, without peeling them. Bake on 350 F for a few minutes and they will turn dark brown/black!
