Tell us about yourself! What’s your name, where do you live, where do you work?

Hey there! I’m Jessica Bippen, a Registered Dietitian from St. Louis, MO. I’m the founder of Nourished by Nutrition, my wellness website and nutrition coaching practice. My mission for Nourished by Nutrition is to become an all encompassing wellness resource that helps women uncover their forever wellness. By providing science-based articles, wholesome plant-focused recipes and nutrition coaching, I help others step into the best version of themselves.

Aside from Nourished by Nutrition, I am one of the Registered Dietitian Nutritionists for HUM Nutrition, a supplement company that focus on health and beauty from the inside out. I’m the Dietitian for Majka, a company that supports mom’s through nourishing lactation support and wholesome nutrition products. I’m also one of the dietitians for Tammy Hembrow Fitness. I create the meal plans for the Tammy Hembrow Fitness app.

Evenings and weekends are my time to wind down and recharge with my man and two fur babies. We love kicking back on the couch and binge watching Netflix, cooking together and exploring what St. Louis has to offer.

Share your approach to food with us: what do you like to cook? Why?

Nourished by Nutrition is all about designing a lifestyle that is sustainable. It’s about uncovering your forever wellness by tuning into your uniqueness and eating in a way that makes you feel your best. This is why my eating philosophy is centered around a plant-based lifestyle. Simply put, a plant-based diet is one that focuses on vegetables, fruits, nuts, seeds, legumes and whole grains. These foods make up the majority of your plate and in turn the bulk of your diet. This allows for a more flexible mindset around eating, while still emphasizing plant-based foods. It may be easier to refer to this way of eating as a plant-centric diet. If you choose to incorporate animal protein I encourage it to be thought of as a side or condiment.

That being said, I’m a huge fan of batch prepping ingredients for the week ahead. This allows me to create meals that are quick and nutritious. It also allows for flexibility to create different meals based depending on the day. I like to roast a few sheet pans of veggies, roast some sweet potatoes, prep a protein and make sure I have sauces, dressings or condiments or hand. From this prep I can make a salad, grain bowl, tacos, or stuffed sweet potato all under 10 minutes.

Describe your food personality in 5-7 words:

Fresh, Plant-focused, Vibrant, Wholesome, Balanced

What are your 3-5 favorite recipes? Why? Tell us about them!

It’s very important to me to create recipes that are not only delicious but wholesome and balanced. These recipes are a few of my top recipes I’ve shared on the blog and just so happen to be m favorites. I love these recipes because they’re easy to make and are incredibly nourishing. When I create recipes I try my best to make sure they have a good source of protein, healthy fats and fiber-rich carbohydrates. This helps keep blood sugar balanced, you energy levels up, and feeling completely satisfied. These recipes tick all of those boxes!

Peanut Butter Raspberry Oatmeal Bowl

Vegan Nut and Seed Bread

Sheet Pan Sesame Tofu (or chicken) and Brussels Sprouts

Cacao Tahini Collagen Bites

What’s your favorite thing about Want the Recipe?

I absolutely love having all the recipes I want in one place. I save so many recipes for inspiration while scrolling on Instagram. It’s nice to be able to pull them up in the app and have them at my fingertips.

I also love that I can tweak recipes I’ve saved based on my preferences. Since I like to be creative in the kitchen, it’s nice to make substitutions to the initial inspiration and save the new version.

What food can you not live without?

Almond butter or Japanese sweet potatoes. Don’t make me choose!

What kitchen appliance do you swear by?

A sharp chef’s knife. This is such an underrated kitchen tool. Once you have one, you realize how much easier and more enjoyable cooking and prep work becomes. Slicing and chopping gets done in a fraction of the time with a whole lot less effort. This is actually one of my favorite gifts to give because most people don’t realize how much it can change their relationship with cooking.

What are your favorite blogs/ Instagram accounts that you follow? What do you like about them?

I like following food blogs and Instagrams accounts that inspire me to cook wholesome plant-based meals and keep me visually engaged with beautifully styled photos. My favorites are @jessiemaysynder, @thefirstmess and @dollyandpatmeal.

On instagram I like following people who inspire me on a personal level. People who keep it real and challenge me to grow. My favorites are @sammyjaneeason, @sophie.jaffe, and @shutthekaleup.

I also like to keep up on the latest wellness trends. I love articles from @thechalkboardmag, @mindbodygreen and @iamwellandgood.

Do you have any advice for our food community?

Healthy eating and health in general is subjective. We all have our own definition of healthy eating. It all relates back to what make us, as unique individuals, feel our best. Yes, there are opinions. And yes, there is science. But in all honesty, most science is extremely vague. Plus, because of bio-individuality (our genetics and so much more!) what works for someone might not work well for you. This is why it’s essential to find out what works for you. Do your own research or seek help from a qualified health professional. We can help guide you but again, in the end it is up to you to decide.

Do you have a favorite kitchen hack/ trick?

Keeping fresh herbs in a container of water in the fridge keeps them fresh so much longer. I find mine last up to two weeks!
