Interview with Rebecca from Nutrition by RD

Tell us about yourself!

Hi! I’m Rebecca, a Registered Dietitian/ Nutritionist and the founder of Nutrition by RD, a nutrition coaching and consulting company based in New York City. My nutrition philosophy is based on a mind-body approach and is rooted in self-compassion, curiosity and behavior change. I work collaboratively with each of my clients to help them listen, learn and trust their body’s internal cues and become the expert of their own body, rather than rely on diet rules. I enjoy sharing exciting and easy meal ideas to help my clients secure their own tools to fuel and satisfy their taste buds, body and mind.

What are your favorite recipes? Why? Tell us about them!

Pumpkin and Banana Oat Flour Pancakes – These scream: cozy fall morning! They are so delicious and easy to make. I love that they feel super indulgent, but are made with real and wholesome ingredients and no added sugar. Recipe here.

Seared Scallops Over Creamy Ghee + Nutritional Yeast Polenta – I love this meal because often we think that a “comfort meal” and a nourishing meal are mutually exclusive and this dish checks both boxes. It’s made with only 6 ingredients and will have you feeling like an accomplished chef in no time (takes 30 easy mins!).   Recipe here.

Summertime Tricolore and Strawberry Salad –  I could eat this salad every day! The combination of the dijon/balsamic dressing with the sweetness of the fresh strawberries and saltiness from the parm is like magic in your mouth! So good and always a crowd pleaser! Perfect for a side at a summertime BBQ or for a midday pick-me-up/BYOL during the workweek.  Recipe here.

What food can you not live without?

Eggs (I’m a big breakfast enthusiast) and love there are so many ways to prepare eggs so that you never get bored.

What kitchen appliance do you swear by?

Food processor (makes life/chopping so much easier!)

What are your favorite blogs/ Instagram accounts that you follow? What do you like about them?

The Minimalist Baker: Love that their blog is true to its name and keeps things simple and sticks to 10 ingredients or less. Plus cooking time is a maximum of 30 minutes and everything is delicious!

nutritionstripped.com:  I love her approach to healthy living and food and that she provides evidence-based, reliable nutrition advice. She also has a great section on her blog where she debunks common dieting myths.

Do you have any advice for our food community?

When it comes to food and my philosophy as a nutritionist, I believe that finding a healthy balance between nourishing your body and soul is SO important. Enjoying delicious food with family and friends is one of life’s greatest joys, and you should never have to choose between that and living a healthy life! The two can go hand in hand by incorporating healthy habits into your routine.
