Tell us about yourself! What’s your name, where do you live, what’s your work, how do you spend your time? What’s the low down?!
Hi! My name is Abigail Taft and I’m a Registered Dietitian, dog mom and wife-to-be living in Cleveland, OH. I have an integrative nutrition private practice and consulting business and I absolutely love what I do – It’s the perfect mix of creativity, entrepreneurship, and diversity. Every day looks a little bit different but it typically includes counseling my one-on-one private clients, events and presentations, writing and researching for blog posts and articles, taking lots of food pics for my instagram account, recipe developing, and even the not-so-fun behind the scenes business tasks like accounting and invoicing. Before I went back to graduate school to become a dietitian, I worked in NYC in financial marketing and recruiting and it’s been fun to utilize some of those skills in my business now.
I love spending time with my family, fiance and our Sheepadoodle, Moose. I’m into anything that involves wine, food, friends, travel and being outside. My ideal Saturday is an early wake-up with a slow, coffee-filled morning, a long hike, lunch and afternoon at a beautiful vineyard, an incredible dinner at a new restaurant and in-bed and asleep by 10pm.
Share your approach to food with us: what do you like to cook? Why do you like to cook that way?
I believe that nothing impacts our health more than the food we put into our bodies. I love to cook in a way that nourishes our body and makes us feel our best. I love to cook using whole, real foods, tons of colors & organic plants, lean proteins and healthy fats. I really try to make cooking practical and approachable and encourage my clients to get comfortable in the kitchen. I’m definitely not someone who follows recipes (although I definitely should sometimes) and am more of a ‘recipe-free’ cook. I encourage myself and clients to experiment with simple ingredients, find flavors that you love and make you feel good, and get in touch with your creative side in the kitchen.
Describe your food personality in 5-7 words:

1.Vegan Peanut Butter Banana Bread – Banana bread is one of those foods that really requires no introduction because it is THAT good. It’s one of my absolute favorite things to bake, eat and share with everyone. I’m very into this recipe – it’s super simple and vegan!
2.Oatmeal Raisin Breakfast Cookies – What is better than dessert for breakfast? If eating some form of baked goods every morning made me feel great, then I would 100% be on board. Thankfully my oatmeal raisin breakfast cookies taste like a decadent oatmeal raisin cookie but are low in sugar, and packed with fiber, healthy fats and protein AKA they are the perfect little bundle of deliciousness to start your day.
3. Egg-Free (& easily Vegan) Caesar Salad: Caesar salad has always been my absolute favorite way to eat a big bowl of greens. I’m a big proponent of homemade salad dressings. Here’s a Caesar dressing that you can feel good about putting in your body and still enjoy the delicious, garlicky, creamy goodness.
4.Roasted Cauliflower & Turmeric Tahini Sauce: Roasted cauliflower has a crispy, crunchy, and caramelized flavor and texture that combines for that perfect sweet and salty blend. Combine the roasted cauliflower with the creamy and tangy turmeric tahini sauce, and it makes for a seriously good side dish or salad topper
5. The OG Green Smoothie: This smoothie blend is on repeat every weekend in our house. Smoothies are one of my favorite ways to flush our bodies with tons of nutrients. I always incorporate fruit, veggies, healthy fats, protein and leafy greens into my smoothie blends.

What food can you not live without?
So hard! I’m going with fruit and nut butter. I eat them every single day.
What kitchen appliance do you swear by?
I obviously am obsessed with my Vitamix and use it almost everyday for smoothies, soups, nut milk, salad dressing. I’m also a huge fan of my Nespresso Aeroccino Milk Frother. Having perfectly warm and frothy milk in my morning coffee makes me so happy.

Do you have any advice for our food community?
Eat food in its most unrefined and unprocessed form as possible. Everything tastes better served over a big bowl of greens and with an egg on top. Don’t overcomplicate food or recipes!
Do you have a favorite kitchen hack/ trick?
Adding frozen cauliflower to my smoothies. A creamy, thick smoothie texture is absolutely key, and it’s very hard to get without using either ice, which makes the smoothie icy and watery, or tons of frozen fruit, which can quickly add up in sugar (like 3+ servings of fruit in 1 smoothie). For my smoothies, I’ll do 1 serving of fruit and then add anywhere from ½-1.5 cups of frozen cauliflower to thicken the smoothie while keeping it creamy and delicious. The cauliflower adds additional fiber and vitamins to the smoothie without affecting the taste, and it makes the smoothie much bigger!
